Spring Cleaning Pantry Cookies

Method
- Line a baking sheet with parchment paper and set aside.
- In a large saucepan over medium heat, melt the butter, cocoa powder, and granulated sugar. Bring to a boil, and let simmer for 3-4 minutes, or until thickened.
- Mix in peanut butter, vanilla extract, and rolled oats and remove from heat.
- Once slightly cooled, scoop out cookies and place on baking sheet. Place in the fridge for 15-20 minutes, or until cookies are set. Serve cool.
