1Red bell pepper, diced

1Green bell pepper, diced

1 lbGround beef

1 canGreen chiles (4 oz)

1 canBlack beans, drained and rinsed

1 canRefried beans

30-35Tortillas, cut into 2 inch strips

Method
- Heat olive oil in a large saute pan on medium heat. Add onions and peppers and cook for 5-7 minutes or until softened. Remove from pan and set aside. Add ground beef to pan, and brown. Remove from heat and cool.
- In a 9×13 pan, place one layer of the cut tortillas. Top with 1 cup of enchilada sauce. Spread refried beans on top of the tortillas, and evenly spread black beans and green chiles on top. Sprinkle 2 cups cheese on top.
- Add another layer of cut tortillas, then 1 cup of enchilada sauce. Spread meat on top of tortillas, and then spread corn, and pepper and onion mixture evenly. Sprinkle 2 more cups of cheese on top.
- Add the final layer of cut tortillas, one cup of enchilada sauce, and remaining cheese.
- Cover with foil and bake at 350 degrees for 40 minutes. Remove foil and bake for an additional 10 minutes.
- Top with sour cream and cilantro.
