Ingredients for 4 – 6 Servings

    Large shrimp, peeled and deveined
  • 1 Cup
    Italian seasoned breadcrumbs
  • 1/2 Cup
    Grated Parmesan cheese
  • 2
    Eggs, beaten
  • Olive oil, for sautéing
  • 8 Oz
    Spaghetti or linguine
  • 1/4 Cup
    Extra virgin olive oil
  • 4 Cloves
    Garlic, thinly sliced
  • 1/2 to 1 Teaspoon
    Red pepper flakes (to taste)
  • Sea salt, to taste
  • Optional: Chopped fresh parsley, lemon zest, or extra Parmesan for garnish

Method

  1. Begin by patting the shrimp dry with paper towels. Set up a breading station with one bowl containing beaten eggs and another containing Italian seasoned breadcrumbs mixed with Parmesan cheese. Dip each shrimp into the egg, then coat it in the breadcrumb mixture. Set the breaded shrimp aside on a plate.
  2. Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Before draining, reserve about 1/2 cup of the pasta water. Drain the pasta and set it aside.
  3. In a large skillet, heat 2 to 3 tablespoons of olive oil over medium heat. Add the breaded shrimp in a single layer and cook for 2 to 3 minutes per side, or until golden and cooked through. Remove the shrimp from the skillet and place them on a paper towel-lined plate.
  4. Wipe out any burnt breadcrumbs from the skillet if needed, then add 1/4 cup olive oil and warm it over medium heat. Add the sliced garlic and red pepper flakes, sautéing gently until the garlic turns golden and aromatic, about 2 minutes. Add the drained pasta to the skillet along with a splash of the reserved pasta water, tossing to coat the noodles evenly. Season to taste with sea salt.
  5. To serve, divide the pasta among plates and top with the crispy breaded shrimp. Garnish with chopped parsley, lemon zest, or extra Parmesan if desired, and finish with a drizzle of olive oil just before serving
