Jasper’s Louisburg Apple Cider Biscuits
Nothing says fall in Kansas quite like Louisburg Cider Mill! Their fresh-pressed apple cider is out of this world, and I couldn’t resist using it in a batch of warm, flaky Apple Cider Biscuits. By reducing the cider down to a syrup, the biscuits are packed with that rich apple flavor we all love, balanced with just a touch of cinnamon.
Louisburg has been pressing cider locally for decades, and every sip tastes like Kansas tradition. If you’ve never baked with their cider, now’s the time—it transforms even a simple biscuit into something truly special.
Support local, enjoy the season, and treat yourself to the magic of Louisburg Cider Mill—because fall just isn’t complete without it.

Method
- To bring out the best flavor of the Louisburg Cider Mill apple cider, begin by pouring half a cup into a small saucepan and simmering it until it reduces by half. This creates a syrupy cider concentrate that gives the biscuits a stronger apple note. While the cider cools, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl. This blend of dry ingredients provides structure, lift, and just a hint of warm spice.
- Next, cut the cold butter into the flour mixture until it resembles coarse crumbs. Those little butter pieces are what create the flakiness in each bite. Once the cider has cooled, stir it in along with the buttermilk. Mix lightly—just enough to bring the dough together—because overmixing will make the biscuits tough. The dough should be soft and slightly sticky.
- Turn the dough out onto a floured surface and gently pat it into a rectangle about one inch thick. To encourage flaky layers, fold the dough over itself once or twice, then pat it back down to the same thickness. Using a biscuit cutter or floured glass, cut out rounds and place them on a parchment-lined baking sheet, close together if you prefer softer edges or spaced apart for crisper sides.
- Bake at 425°F for 12 to 15 minutes until golden brown and puffed. For a sweet finishing touch, brush the warm biscuits with melted butter and sprinkle with cinnamon sugar. These apple cider biscuits are perfect served on their own, with honey butter, or as a comforting side to pork, chicken, or hearty fall soups. The cider adds just the right hint of sweetness while keeping the biscuits tender and flavorful.
