Jasper’s Heirloom Tomatoes with Andy’s Corn Orzo

Ingredients for 4 – 6 Servings

  • 1 Cup
    Orzo pasta
  • 1 1/2 Cups
    Heirloom tomatoes, chopped (use a mix of colors and sizes)
  • 1 Cup
    Andy’s Candy Corn kernels (cut fresh off the cob)
  • 1/4 Cup
    Shallots, minced
  • 2 Tablespoons
    Olive oil
  • 1/4 Cup
    Fresh basil, torn or sliced
  • Salt and pepper to taste
  • 1/2 Cup
    Romano cheese, grated

Method

  1. Bring a pot of salted water to a boil and cook the orzo until al dente, about 8–10 minutes. Drain, rinse under cool water to stop the cooking, and set aside.
  2. While the orzo cooks, heat a small skillet over medium heat with a drizzle of olive oil and sauté shallots, tomatoes & corn kernels for 2–3 minutes until just tender and slightly golden.
  3. In pan, add cooked orzo and toss. Add butter, salt and pepper to taste, then Romano cheese and mix until creamy, fold in the fresh basil and serve.
