Jasper’s Dragon Chicken

1 poundboneless chicken breast, cut into thin strips

1 tbspall purpose flour

1 tbspvegetable oil for sauce

1red bell pepper cut into 1 half inch squares

Method
- In a bowl combine the chicken strips with cornflour, all purpose flour, salt, and pepper. Mix well until the chicken is evenly coated. Heat oil in a deep pan or skillet over medium high heat and fry the chicken in batches until crisp and golden. Remove and place on paper towels to drain excess oil.
- In a separate wok or large skillet heat one tablespoon of vegetable oil over medium heat. Add the minced garlic and ginger and sauté for about thirty seconds until fragrant. Add the sliced onion and red bell pepper and stir fry for two to three minutes until slightly tender but still crisp. In a small bowl mix the soy sauce, chili sauce, ketchup, vinegar, honey, and red chili flakes. Pour the sauce into the pan and stir well, allowing it to simmer for one to two minutes until slightly thickened.
- Add the chicken to the sauce and toss until all pieces are well coated. Cook for another minute so the flavors come together. Serve hot as an appetizer or with fried rice or noodles.
