Method

  1. In a large, sauté pan, add onions and cooking till translation and then garlic and sauté, but do not burn. Add butter and jalapeño and sauté for a few minutes. Add crushed tomatoes, lime juice, salt, pepper, and sugar. Blend until completely smooth. Taste and adjust seasoning if needed. The sauce should be spicy, smoky, and slightly tangy.
  2. Heat the vegetable oil and butter together in a large skillet over medium heat. Once hot, carefully pour in the blended chile sauce. Cook the sauce for about 5 to 7 minutes, stirring occasionally, until it thickens slightly and the flavors deepen. Reduce the heat to medium low to prevent splattering and allow the sauce to simmer gently.
  3. Add the shrimp to the skillet in a single layer, stirring to coat them evenly with the sauce. Cook for about 3 to 4 minutes per side, just until the shrimp turn pink and are cooked through. Be careful not to overcook. Remove from heat and garnish with fresh cilantro if desired. Serve hot with warm tortillas.
