Method

  1. Start by making the flavor base. In a saucepan, combine the shrimp shells, water, soy sauce, bourbon, and orange peel. Bring to a gentle simmer and cook for 10 to 15 minutes to extract flavor. Strain the mixture, discarding the solids, and return the liquid to the pan. Stir in brown sugar, red pepper flakes, and cornstarch until dissolved. Set the sauce aside.
  2. In a large skillet or wok, heat the oil over medium-high heat. Add the garlic and the white parts of the scallions. Cook for about 30 seconds until fragrant, then add the shrimp. Sauté for 2 to 3 minutes until the shrimp are mostly pink. Give the sauce a quick stir, then pour it into the skillet with the shrimp.
  3. Let the sauce bubble and thicken, stirring constantly to coat the shrimp evenly. This should take about 1 to 2 minutes. Once the shrimp are fully cooked and glossy with sauce, remove from heat. Garnish with the green parts of the scallions and serve hot over rice, noodles, or with grilled bread.
