Method
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the apple slices with lemon juice, then add the granulated sugar, brown sugar, cinnamon, nutmeg, and flour. Mix well to coat the apples evenly.
- Roll out the bottom pie crust and fit it into a 9-inch pie pan. Spoon the apple filling into the crust and dot with small pieces of butter.
- Roll out the second crust and place it over the filling. Trim and crimp the edges to seal. Cut a few small slits on top to allow steam to escape.
- Brush the top crust with the beaten egg for a golden finish.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them with foil.
