    Boneless skinless chicken breasts or thighs

    Buttermilk

    Smoked paprika
  • 1 Cup
    All-purpose flour

  • Vegetable Oil for frying
  • Green Goddess Dressing:
  • 1/2 Cup
    Mayonnaise
  • 1/2 Cup
    Sour cream or Greek yogurt
  • 1
    Small Garlic Clove, minced
  • 1 Tbsp
    Lemon juice
  • 1 Tsp
    Dijon mustard
  • 1/2 Cup
    Fresh herbs (such as parsley, tarragon, chives, and basil)

    1 small avocado (for creaminess)

Method

  1. Place the chicken in a bowl with the buttermilk, salt, black pepper, garlic powder, and smoked paprika. Mix well and let it marinate for at least 30 minutes or up to overnight for more flavor. In a separate bowl, whisk together the flour, cornstarch, and baking powder. Heat about two inches of vegetable oil in a deep skillet to 350°F.
  2. Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken in the flour mixture, pressing gently to ensure an even coating. Fry the chicken in batches for about six to eight minutes per side, depending on thickness, until golden brown and crispy. Transfer the cooked chicken to a wire rack or paper towels to drain excess oil.
  3. For the Green Goddess dressing, blend the mayonnaise, sour cream or Greek yogurt, garlic, lemon juice, Dijon mustard, fresh herbs, and avocado (if using) in a food processor until smooth. Season with salt and pepper to taste. Serve the crispy chicken hot with the Green Goddess dressing on the side for dipping.
