Ingredients for 4-6 Servings

  • Chicken Mixture:
  • 3 Cups
    Cooked rotisserie chicken, diced or shredded
  • 1/2 Cup
    Red onion, diced
  • 1 Cup
    Celery, diced
  • 3/4 Cup
    Water chestnuts, diced
  • 1/4 Cup
    Pimentos, diced
  • Dressing:
  • 1 Cup
    Mayonnaise
  • 1/2 Cup
    Sour cream
  • 1 Tbsp
    Dijon mustard
  • 2 Tsp
    Sugar
  • 1 Tsp
    Salt
  • 1 Tsp
    Black pepper
  • 1 Tbsp
    Lemon juice

Method

  1. In a large bowl, combine the chicken, red onion, celery, water chestnuts, and pimentos.
  2. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon, sugar, salt, pepper, and lemon juice until smooth.
  3. Pour the dressing over the chicken mixture and gently stir to coat everything evenly.
  4. Cover and refrigerate at least 1 hour to let the flavors blend.
  5. Serve chilled—on a bed of greens with a toasted Wolferman’s English muffin.
