1 CupOrzo pasta

1 1/2 CupsHeirloom tomatoes, chopped (use a mix of colors and sizes)

1 CupAndy’s Candy Corn kernels (cut fresh off the cob)

1/4 CupShallots, minced

2 TablespoonsOlive oil

1/4 CupFresh basil, torn or sliced

Method
- Bring a pot of salted water to a boil and cook the orzo until al dente, about 8–10 minutes. Drain, rinse under cool water to stop the cooking, and set aside.
- While the orzo cooks, heat a small skillet over medium heat with a drizzle of olive oil and sauté shallots, tomatoes & corn kernels for 2–3 minutes until just tender and slightly golden.
- In pan, add cooked orzo and toss. Add butter, salt and pepper to taste, then Romano cheese and mix until creamy, fold in the fresh basil and serve.
