Ingredients for 4 – 6 Servings

  • 1 lb
    medium shrimp, peeled and deveined
  • 1 tbsp
    olive oil
  • 1 tsp
    chili powder
  • 1/2 tsp
    cumin
  • Salt and pepper to taste
  • 4 – 6
    tostada shells
  • 2
    ripe avocados
  • 1/4 cup
    red onion, finely chopped
  • 1
    small tomato, seeded and diced
  • 1 tbsp
    lime juice
  • 1 tbsp
    chopped fresh cilantro
  • 1 small
    jalapeño, finely chopped
  • garbanzo beans (optional)
  • Additional toppings
    crumbled queso fresco & fresh corn kernels

Method

  1. Toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Heat a skillet over medium-high heat and cook the shrimp for 2 to 3 minutes per side until pink and cooked through.
  2. Remove from the pan and set aside to cool slightly. For the guacamole, mash the avocados in a bowl until smooth but still chunky. Stir in the red onion, tomato, lime juice, cilantro, and jalapeño if using. Season with salt to taste.
  3. To assemble, spread a generous layer of guacamole on each tostada shell. Top with several shrimp and garnish with extra cilantro, a squeeze of lime, queso, fresco cheese, and fresh shuck, corn. Serve immediately so the shells stay crisp.
