Ingredients for 2 Servings

  • 1 pound
    shrimp peeled and deveined
  • 4 cloves
    garlic, minced
  • 1 cup
    artichoke hearts, drained and quartered
  • 1/2 cup
    Castelvetrano olives, pitted and halved
  • 1 lemon
    lemon zest and juice
  • 1/2 cup
    white wine
  • 2 tbsp
    chopped parsley
  • 1 tsp
    chopped thyme
  • to taste
    Salt
  • to taste
    Red chili pepper flakes
  • for cooking
    Olive oil

Method

  1. Heat a large skillet over medium heat and add a drizzle of olive oil.
  2. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the artichoke hearts and Castelvetrano olives. Sauté for 2-3 minutes, until heated through.
  5. Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan.
  6. Add the lemon zest, lemon juice, chopped parsley, chopped thyme, salt, and red chili pepper flakes to the skillet. Stir to combine.
  7. Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 1-2 minutes, until everything is heated through.
  8. Taste and adjust seasoning if needed.
  9. Serve the Shrimp Limone hot.
