Method
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes on each side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the artichoke hearts and Castelvetrano olives. Sauté for 2-3 minutes, until heated through.
- Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan.
- Add the lemon zest, lemon juice, chopped parsley, chopped thyme, salt, and red chili pepper flakes to the skillet. Stir to combine.
- Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for an additional 1-2 minutes, until everything is heated through.
- Taste and adjust seasoning if needed.
- Serve the Shrimp Limone hot.
