Buttermilk Biscuits

Ingredients for 12 Servings

  • 1 tbsp
    Vinegar
  • 1 cup
    Milk
  • 2 1/2 cups
    Flour
  • 1 tbsp
    Baking Powder
  • 1 tsp
    Salt
  • 1/4 tsp
    Baking soda
  • 1 stick
    Butter (very cold)

Method

  1. Make the buttermilk: Place 1 tablespoon vinegar in a 1-cup measuring cup. Add the milk to make one cup of liquid. Let sit for 5 minutes.
  2. In a large bowl, combine the flour, baking powder, salt, and baking soda. Using a pastry blender, cut in the butter until it resembles coarse crumbs.
  3. Make a well in the center of the mixture. Pour buttermilk into the well and stir gently until just combined. Turn dough onto a floured work surface and pat it into a rectangle.
  4. Fold the rectangle in thirds. Turn dough a half turn, gather any crumbs, and flatten back into a rectangle. Repeat twice more, folding and pressing the dough a total of three times.
  5. Roll dough on a floured surface to about 1/2 inch thick. Use a 2” – 2 1⁄2” round biscuit cutter or a floured glass rim to cut biscuits. Re-roll any scraps to make more biscuits.
  6. Bake the biscuits at 375 degrees for 15-17 minutes until tops are golden brown.
